Paradise in Captiva Island


Alright, I know I haven't posted anything in a while but......I have been super busy ladies. I just recently went on vacation to Captiva, Florida. It was wonderful, bright and relaxing. I loved the restaurants, for example "The Island Cow, The Mucky Duck,Cheeburger Cheeburger, The Bubble room, and Key lime Bistro" Oh, it was scrumptious!!! I could have stayed another week. Oh and don't get me started on the beach areas....SO beautiful. We stayed right on the Gulf of Mexico, so it was super hot, but well worth the sweat. The resort we stayed in was South Seas resort, great pools, great service and friendly staff and also very clean. Everything is really close to the resort. We only had to drive an hour to get from and to the Fort Meyer airport. Some things were very pricey, but well worth it.

I absolutley love love love this line, it gives me chills, he proclaims his love for her so genuinely. AHHHHHH! I love it, if you have not read Pride & Prejudice, or watched the 2005 Pride & Prejudice movie starring Kiera Knightley, and Matthew Macfayden........YOU MUST READ OR WATCH IT NOW!!!! You will absolutley adore it. Its like a monthly routine for me. Its is rated PG, its a very clean classy movie, with so much grace and appeal. It is a must see, and read. :)

Tea Sandwiches

  • 24 bread slices (recommended: white, rye, whole grain, pumpernickel, or a combination)
  • 1 cup guacamole
  • 2 cooked chicken breasts, thinly sliced
  • 4 ounces cream cheese, at room temperature
  • 2 tablespoons chopped chives
  • 1/2 English cucumber, sliced into thin rounds
  • 1/4 cantaloupe, peeled, seeded and thinly sliced
  • 1/4 pound thinly sliced prosciutto
  • Special Equipment: 3-inch round cookie cutter

Directions

Using a round cookie cutter, cut out the center of the bread, removing the crusts.
